Berry Smoothie Bowl

I grew up eating the same breakfast for years at a time! I think I got this from my dad. When I was very young, my dad and I ate an english muffin with cheeze whiz every morning. My dad eventually moved on from this delicacy to a giant wheat cereal which looked pretty gross to my 10 year old brain so I switched to toast and OJ! To my credit, I did vary between peanut butter-honey, peanut butter-jam and nutella! I kept this up for probably close to 10 years and I still sometimes reach for an english muffin with peanut butter (cheeze whiz is so 1990s… haha) and a banana but I need variety now that I am a sophisticated adult (or pretending to be anyways).

When Jeff and I meal plan on Sunday, breakfast is always the meal I struggle with. I can’t decide between my 4 or 5 go to options! One of these is this delicious smoothie bowl. In the summertime, this smoothie bowl is on the menu every single week. Last year for my birthday my mom got me a food processor and this has improved my smoothie game 200%!! I find that by using my food processor I can put half as much milk as if I was using my blender and the resulting texture is a thick ice-cream like smoothie! You can easily change the fruits and the toppings for extra variety! The smoothie pictured here was made from half blackberries and half strawberries. The açai powder is not a must but it is definitely worth it and tasty! I purchased some freeze dried açai powder at a stall at the Seattle market last summer and I will need to plan another trip to Seattle when I run out :)

Ingredients

  • 2 cups frozen blackberries
  • 2 cups frozen strawberries
  • 1 cup unsweetened vanilla almond milk (2 cups if using a regular blender)
  • 1 scoop vanilla protein powder
  • 1 tiny dash of honey
  • 1 tsp açai powder
    Toppings suggestions:
  • Sliced banana
  • Shredded coconut flakes
  • Granola
  • Chia seed
  • Fresh berries

Directions

  1. Using a food processor, blend everything together except the toppings.
  2. Add more almond milk if needed.
  3. Transfer to a bowl and top with your favorite toppings!
