Carmelized Onion and Mushroom Quiche

The holidays are starting verrrryyyy soon! Some of us are already on vacation and can write a bunch of blog posts (me) and some of us are still hard at work until the 22nd (Jeff)! Preparing for the holidays is stressful especially if you are hosting. If you have family or friends staying with you during this time and want to impress them with a fancy looking brunch, this quiche is the solution to all your problems!! It is super easy to make and ohhhh so good! I’m not kidding, I made twice in two weeks and I usually don’t like to eat the same things more than 3 times in week! It’s that good! It tastes MUCH better than it looks too haha!

Ingredients

  • 1.5 cups flour
  • 5.5 oz cold unsalted butter - cubed
  • 3.5 tbsp water
  • 4 large cremini mushrooms
  • 1/4 large sweet onion
  • 1 tbsp thyme
  • 6 large eggs
  • 1/4 cup milk
  • Salt + pepper
  • Olive oil

Directions

  1. Preheat to oven to 400 F.
  2. Either using your hands or a food processor, mix the flour, a generous pinch of salt and butter. If you are using a food processor, process until the mixture looks like cookie crumbles. If you are using your hands, grab a handful of mixture in each hand and press the butter while mixing it with the flour until it looks like cookie crumbles.
  3. Add the water 1 tbsp at the time until the mixture comes together. Make a big ball, cover it in cling wrap and refrigerate for 30 minutes.
  4. Sprinkle flour generously on your counter top and roll the dough until it is 1/4 in thick.
  5. Place the dough in a pie dish, pock a dozen hole through the dough and blind bake it in the preheated oven for 20 minutes. If you do not have pastry weights, cover the pie with foil or parchemin paper and cover this with uncooked rice or uncooked beans.
  6. While you blind bake your dough, chop onions and mushrooms
  7. Heat olive oil in a pan, add chopped mushroom, onions, thyme and season with salt and pepper. Cook for 10 minutes while stirring frequently to avoid burning.
  8. In a mixing bowl, whip eggs, milk, a pinch of salt and pepper. Add the onion and mushrooms.
  9. Take your crust out of the oven and lower oven temperature to 325 F.
  10. Pour the egg mixture in the crust and bake for approximately 20-25 minutes (until the eggs are set).
